Good morning,
I find Hidetchi's work exceptional for the diffusion of the game. I wanted to ask you if you are aware of any engine and database that allows both to analyze your own games and to review the games of the pros (without having to read on the kifu move after move). Chess is full of professional material, and lately the go also has practical and easy to use software (such as leela with sabaki and the ".sgf" databases).

The "ShogiGUI" is the main software even for Japanese professionals Shogi players. 
About the database of the Kifu files, actually, Japanese pros are allowed to use a kind of complete database of professional games (maintained by Japanese Shogi Federation) however amateurs can't access it even though we pay money.

We also get kifu database of professionals here https://shogidb2.com/
This website is managed by volunteers.

Are there not professional software, even for a fee, that the pros use to easily read the games in format and that allow for analysis? I would have liked to have digitized kifu from professional games, so to be able to see them easily.

Hi, we usually use "ShogiGUI" which is very popular freeware. This software can load and analyze ".kif" files. It's pretty similar to using the ".sgf" file (you can export kif file from  81 dojo).
